        Harvested this big sow today! Responsibly and humanely .22 between the eyes, did not even know what hit her. Trapped by the river in Georgetown, TX. Sure nice knowing where your food comes from.

            Do you smoke hams and bacon? That would be awesome. We smoke rabbits and squirrels but we have no hogs in my area.

              I haven’t had good luck smoking the wild hogs. I think they are too lean. My wife uses the hams to make carnitas. Other than that we cook just like pork from the store. After I have cleaned and quartered the hog I let it sit in salted ice for 3 or 4 days before I process it. This makes it more tender and gets rid of gameyness.
